- 1 (28 oz.) can tomatoes
- 1 medium onion
- 2 cloves garlic
- 1/2 tsp. thyme
- 1/2 tsp. oregano
- 1 c. diced potato
- 1 medium green pepper
- salt and pepper to taste
- 2 c. water
- 2 Tbsp. parsley
