Sausage Enchiladas

  • 1 lb. Owens sausage (breakfast)
  • 1 small onion, diced
  • 1 large plus 1 small pkg. cream cheese, softened
  • 1 can Ro-Tel tomatoes with green chilies
  • 12 to 18 flour tortillas
  • 1 can refried beans
  • 5 c. grated Monterey Jack cheese
  • 1 Tbsp. chili powder (season to taste)
  • 1 tsp. garlic (season to taste)

Directions

    Brown sausage and onion in skillet.

    Pour over cream cheese in bowl.

    Mix until cream cheese is blended.

    Add Ro-Tel tomatoes and mix well.

    Spread tortillas with thin layer of refried beans, then place 1/4 cup meat mixture in center with a pinch of cheese and roll up.

    Place in greased casserole.

    Top with cheese.

    Bake at 350° for about 20 minutes or until cheese melts.
