  • 2 tsp. oil
  • 3/4 lb. red potatoes (about 3), cut into 1/2-inch cubes King Sooper's 5 lb For $1.88 thru 02/09
  • 1/2 cup each chopped onions and red peppers
  • 3 cloves garlic, minced
  • 1 Tbsp. chopped fresh parsley
  • 1/8 tsp. black pepper

Directions

    Cut sausage lengthwise in half, then crosswise into thin slices.

    Cook in large nonstick skillet on medium-high heat 5 min.

    or until lightly browned, stirring occasionally.

    Remove from skillet; cover to keep warm.

    Heat oil in same skillet.
