- 1/2 lb roll of pork sausage
- 1 medium onion, chopped (optional)
- 1 unbaked prepared 9 inch pie shell
- 1/2 cup shredded swiss cheese
- 4 eggs
- 1 cup half-and-half
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Directions

1Preheat oven to 425°F

2Cook and crumble sausage and onion until sausage is browned.

3Cover bottom of pie crust with mixture and top with cheese.

4In medium mixing bowl. Beat eggs and add half and half, salt and pepper.

5Pour over sausage mixture.

6Bake 15 minutes. Reduce oven to 350 F and continue cooking for 20 minutes or until set. Let stand 5 minutes then cut into wedges.
