Sausage Quiche

  • 1 (9-inch) unbaked pie shell
  • 1 egg yolk
  • 1 tsp. water
  • 2/3 lb. sausage
  • 1/2 c. chopped onion
  • 2 Tbsp. flour
  • 4 eggs
  • 2/3 c. half and half or evaporated milk
  • 2 c. shredded Swiss or Cheddar cheese

    Pierce pie shell.

    Beat egg yolk with water and brush shell. Bake at 400° for 15 minutes. Saute sausage and onion, then stir in flour. Beat eggs with milk.

    Set aside.

    Sprinkle half the cheese on shell.

    Top with sausage, then rest of cheese.

    Pour in egg mixture. Sprinkle with parsley. Bake at 375° for 25 to 30 minutes or until set.
