Ingredients
- 2 Tbsp. butter
- 1 medium onion, finely chopped
- 1 to 2 ribs celery, finely chopped
- 1 green pepper, finely chopped
- 1 (12 oz.) pkg. sausage roll
- 1/4 lb. mushrooms, sliced
- 1 to 2 cloves minced garlic
- 1/4 tsp. each: basil and thyme
- cayenne or Tabasco sauce to taste
- 1 c. rice
- 2 1/2 c. chicken stock
Directions

1In a large skillet, melt butter.

2Saute onion, celery and green pepper until soft.

3Add sausage until browned and crumbly. Add mushrooms, garlic and spices.

4Cook about 3 to 5 minutes. Stir in rice.

5Add stock.

6Boil.

7Reduce heat to simmer and cook until liquid is absorbed, 20 to 25 minutes.

8Serves 4 to 6.
