Squash Casserole

Ingredients

  • 5 to 6 medium yellow squash, cut into 1-inch slices
  • 8 to 10 strips crisp fried bacon
  • 1/3 c. chopped green pepper
  • 1/3 c. chopped onion
  • 1 1/2 c. Cheddar cheese, grated (reserve 1/4 c. cheese)
  • salt and pepper to taste
  • 4 tomato slices (optional)

Directions

    Cook squash in salt water until tender.

    Drain and cut up into small pieces with sharp knife (do not crush).

    Mix bacon, pepper, onion, squash and cheese.

    Pour into casserole dish.

    Sprinkle 1/4 cup cheese over top, then position tomato slices on top.

    Bake, uncovered, at 375° for about 20 to 25 minutes.
