German Chocolate Pie

- 2 oz. German bittersweet chocolate
- 2 Tbsp. butter
- 1/3 c. flour
- 3/4 c. sugar
- 1/4 tsp. salt
- 2 1/2 c. milk, scalded
- 3 eggs, separated
- 3/4 tsp. vanilla
- 1 baked 8-inch pie shell
- 1/3 c. sugar
- chopped nuts or coconut
Directions

1Melt chocolate and butter over low heat or in a double boiler. Mix flour, sugar and salt and stir into chocolate mixture. Slowly add milk, stirring constantly.

2Cook until mixture is fully thickened, about 15 minutes.

3Beat egg yolks well; stir in a little of the chocolate mixture, then pour egg into the hot chocolate mixture and cook about 2 minutes longer, stirring constantly.

4Remove from heat, cool partially, and stir in vanilla.

5Pour into pie shell.
