Sausage & Spinach Soup

  • 10 ounces sweet Italian sausage
  • 1 cup chopped onion
  • 2 teaspoons minced garlic
  • 12 cup water
  • 1 (15 ounce) can soybeans
  • 1 (14 1/2 ounce) candiced petite tomatoes
  • 3 (42 ounce) cans chicken broth
  • 2 cups chopped Baby Spinach
  • 1 tablespoon chopped fresh basil
  • 2 teaspoons chopped fresh oregano
  • 2 tablespoons grated romano cheese

Directions

    Remove casings from sausage.

    Cook it in a large sauce pan until browned, stirring to crumble.

    add the onion and garlic, cook for 2 minutes.

    Stir in water, beans, tomatoes, broth.

    Cover and bring to a boil.

    Remove from heat, stir in spinach, basil and oregano.

    Sprinkle each serving with grated Romano cheese.
