Sausage Stuffed Shells

  • 1 lb. Italian sweet sausage
  • 1/2 c. chopped onion
  • 4 slices bread, crumbled
  • 1 egg
  • 1/4 c. fresh parsley or 1 tsp. dried
  • 20 jumbo shells, parboiled and drained
  • your favorite spaghetti sauce
  • 1/4 c. grated Parmesan cheese

    Prick sausage with fork and parboil in small amount of water in covered skillet for 5 minutes.

    Drain.

    Chop sausage and fry along with onion.

    Spoon off excess fat.

    Add egg, bread and parsley and mix thoroughly.

    Fill hot parboiled shells with sausage mixture.

    Arrange in a 9 x 13-inch baking dish, topping with spaghetti sauce.

    Cover with foil and bake at 350° for 30 minutes or until hot and bubbly.

    Remove foil.

    Sprinkle grated cheese and bake, uncovered, for 10 minutes more.
