  • 19 ounces red enchilada sauce
  • 1 12 cups cooked shredded beef (optional) or 1 12 cups chicken (optional)
  • 8 -16 ounces shredded mozzarella cheese
  • 6 flour tortillas or 6 corn tortillas

Directions

    Spray 9 x 13 baking dish with cooking spray.

    Add enough enchilada sauce to coat bottom.

    Wet tortillas with a little water.

    Add meat and/or cheese.

    Microwave 20 secs.

    for flour tortillas, 30 secs.

    for corn tortillas.

    Roll and place seam side down in 9 x 13 baking dish.

    Add the rest of the enchilada sauce.

    Sprinkle cheese on top.

    Bake at 400 degrees for 15 minute.
