Sauteed Potato Cubes

- 6 medium potatoes (1 1/2 lb.), peeled and cut into 1/2-inch cubes (about 3 c.)
- salt to taste
- water
- 1/3 c. oil
- fresh ground pepper to taste
- 2 Tbsp. butter or margarine
Directions

1In saucepan, bring to boil the potatoes and enough salted water to cover.

2Reduce heat; simmer for about 2 minutes.

3Drain. In skillet, heat oil.

4Add potatoes.

5Season with salt and pepper. Cook, shaking skillet occasionally and stirring gently, about 10 minutes or until potatoes are nicely browned.

6Drain in colander. Return to skillet; add butter.

7Over high heat, toss potatoes about 5 minutes.

8Makes 4 servings.
