- 1 Tbsp. vegetable oil
- 1 Tbsp. butter
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 1/2 lb. (about 4 medium) all-purpose potatoes, peeled and cut into 3/4-inch cubes
Directions

1Drain potatoes on paper towels.

2In a large heavy skillet, heat oil and butter until butter is melted.

3Add potatoes, turning to coat.

4Saute over medium-high heat, shaking pan occasionally or tossing potatoes with spoon for about 10 minutes or until potatoes begin to brown.

5Sprinkle with salt and pepper.

6Reduce heat to medium.

7Toss again.

8Cover skillet.
-
9Cook about 15 minutes more, shaking skillet or tossing occasionally until potatoes are golden and cooked through.
