- 1 1/2 lb. potatoes
- salt to taste
- 2 Tbsp. vegetable or corn oil
- 2 Tbsp. butter
- freshly ground pepper to taste
- 1 tsp. chopped garlic
- 2 Tbsp. parsley flakes
Directions

1Wash the potatoes and put them in a saucepan.

2Add water to cover and add salt.

3Bring to a boil and simmer until tender, about 30 minutes.

4Drain.

5When cool enough to handle, peel and slice the potatoes in thick slices.
