  • Olive oil-flavored vegetable cooking spray
  • 1/2 teaspoon olive oil
  • 2 cloves garlic, peeled and cut in half
  • 1 pound torn fresh spinach
  • 1 tablespoon fresh lemon juice
  • 1/8 teaspoon salt

Directions

    Coat a large nonstick skillet with cooking spray; add oil. Place over medium-high heat until hot. Add garlic; saute 3 to 4 minutes or until garlic starts to brown. Add spinach; saute 2 to 3 minutes or just until wilted. Remove and discard garlic. Add lemon juice and salt; cook 2 to 3 minutes, stirring occasionally.
