Sauteed Spinach

- 1 lb. baby spinach
- 1/2 Tbsp. extra virgin olive oil
- 1 Tbsp. butter
- 1/2 Tbsp. freshly minced garlic (optional)
- salt to taste (optional)
Directions

1Wash spinach and blanch in boiling water for 2 minutes. Remove spinach and place in an ice water bath for 1 minute.

2Drain spinach and squeeze dry.

3Heat olive oil and butter in a saute pan over medium heat.

4Add garlic and spinach and saute 2 to 3 minutes just until garlic is lightly browned and spinach warmed through. Serve immediately.
