- 6 squid steaks
- flour (for dredging)
- 1 beaten egg
- 4 Tbsp. butter
- 4 Tbsp. vegetable oil
- chopped fresh parsley
- salt and pepper to taste
- dried basil
- lemon wedges
Directions

1Season flour with basil, salt and pepper to taste.

2Dredge steaks in flour; dip in egg.

3Place on rack and refrigerate for 20 minutes.

4Melt butter and oil in pan.

5Saute steaks quickly, two minutes per side on medium-high heat.

6Remove; sprinkle with parsley and serve with lemon wedges.
