- 1/4 lb. bacon
- 1/2 c. onion, chopped
- 1/2 c. celery, chopped
- 1/4 c. green pepper, seeded and chopped
- 2 c. rice, uncooked
- 2 (16 oz.) cans tomatoes, pureed
- 3 tsp. salt
- 1 tsp. sugar
- 1/4 tsp. pepper
- 1/8 tsp. Tabasco
Directions

1In a large frying pan, fry bacon until crisp; remove from pan. Crumble and reserve.

2Saute onions, celery and green pepper in bacon grease until tender.

3Add rice, tomatoes, crumbled bacon and seasoning.

4Cook on top of the stove for 10 minutes.

5Pour into large greased casserole dish, cover tightly and bake at 350° for 1 hour.
