Savannah Red Rice

Ingredients

  • 1/4 lb. bacon
  • 1/2 c. onion, chopped
  • 1/2 c. celery, chopped
  • 1/4 c. green pepper, seeded and chopped
  • 2 c. rice, uncooked
  • 2 (16 oz.) cans tomatoes, pureed
  • 3 tsp. salt
  • 1 tsp. sugar
  • 1/4 tsp. pepper
  • 1/8 tsp. Tabasco

Directions

    In a large frying pan, fry bacon until crisp; remove from pan. Crumble and reserve.

    Saute onions, celery and green pepper in bacon grease until tender.

    Add rice, tomatoes, crumbled bacon and seasoning.

    Cook on top of the stove for 10 minutes.

    Pour into large greased casserole dish, cover tightly and bake at 350° for 1 hour.
