- 4 strips bacon
- 2 green peppers, chopped
- 2 medium onions, chopped
- 2 c. cooked rice
- 1 pt. stewed tomatoes
- 1 c. tomato sauce
- 1 tsp. Tabasco sauce
- 2 c. shrimp or chicken
- salt and pepper to taste
Directions

1In large skillet fry bacon until crisp.

2Add onions and peppers; fry until brown.

3Add rice, tomatoes and Tabasco.

4Stir. Add meat, salt and pepper.

5Put into greased 2-quart casserole. Sprinkle top with cheese.

6Bake at 325° for 30 minutes.
