  • 1 small-medium head cauliflower
  • 5 slices bacon cooked crisp and then crumbled
  • 3 scallions sliced thin
  • 1 1/4 cup shredded montery and cheddar cheese
  • 1 jalapeno pepper chopped - optional
  • 1/3 Cup Bisquick Mix
  • 2 tbsp all purpose flower
  • 2 large eggs
  • Pinch nutmeg
  • Salt
  • Black Pepper
  • 2 tbsp vegetable oil
  • sour cream and chopped chives for garnish

Directions

    Boil Cauliflower in salted water for 11 minutes -transfer to a bowl of ice water.

    In a bowl wisk together eggs, bacon, scallions, jalapeno, flour, pinch of nutmeg,pinch of salt and pepper

    In another large bowl, lightly mash the Cauliflower florets with the back of a fork then whisk in the egg mixture to the cauliflower, fold in the cheese and Bisquick until all combined, season lightly with salt and pepper.

    Heat vegetable oil in nonstick skillet. Drop spoonfuls of batter into skillet and cook until golden brown on both sides (about 2 minutes per side). Serve with sour cream and fresh chopped chives as garnish
