Ingredients

  • 1 c. milk
  • 2 eggs, separated
  • 3/4 c. self-rising flour
  • 2 Tbsp. cornmeal
  • 1 tsp. baking powder
  • dash of pepper
  • 1/2 c. chopped green bell peppers
  • 1 (15 oz.) can cream-style corn
  • 1 (8 oz.) pkg. bacon (10 slices), crisply cooked and crumbled

    Heat oven to 350°.

    Grease a 2-quart casserole.

    In a large bowl, combine milk and egg yolks; blend well.

    Lightly spoon flour into a measuring cup; level off.

    Add flour, cornmeal, baking powder and pepper; beat until smooth.

    Stir in green pepper, corn and bacon.

    In a small bowl beat egg whites until stiff but not dry.

    Fold into corn mixture.

    Pour into dish.

    Bake at 350° for 55 to 70 minutes or until center is firm.
