Ingredients

  • 1 Tbsp. butter
  • 40 mushrooms (medium size), washed, caps whole, stems removed
  • 1/2 tsp. thyme
  • 1/2 tsp. rosemary
  • freshly ground pepper
  • 2 c. chicken bouillon
  • 1/2 c. wild rice
  • 1 shallot
  • 2 cloves garlic
  • 1/4 c. chopped almonds
  • fresh lemon

Directions

    Bring bouillon to a boil.

    Add washed wild rice; cover and simmer for 1 hour.

    Remove from heat.

    Saute mushroom caps in butter.

    Mix rice, almonds, herbs and spices and fill mushroom caps.

    Drizzle with fresh lemon juice.

    Bake on cookie sheet at 300° for 15 minutes.

    May easily be prepared a day prior to re-heating.
