  • 3/4 c. unsweetened orange juice
  • 1/2 c. cooking wine
  • 2 tsp. grated orange rind
  • 1 tsp. dried whole thyme
  • 1/2 tsp. paprika
  • 1/4 tsp. garlic powder
  • 1/4 c. plus 3 Tbsp. unsweetened orange juice
  • 1/4 c. plus 3 Tbsp. orange marmalade

    Place roast in a large shallow dish. Combine 3/4 cup orange juice and next 5 ingredients, stirring well.

    Cover and marinate in refrigerator for 8 hours, turning occasionally.

    Place roast and marinade in a large Dutch oven.

    Cover and bake at 350° for 2 1/2 hours or until meat is tender.
