- 3/4 c. unsweetened orange juice
- 1/2 c. cooking wine
- 2 tsp. grated orange rind
- 1 tsp. dried whole thyme
- 1/2 tsp. paprika
- 1/4 tsp. garlic powder
- 1/4 c. plus 3 Tbsp. unsweetened orange juice
- 1/4 c. plus 3 Tbsp. orange marmalade
Directions

1Trim fat from roast.

2Place roast in a large shallow dish. Combine 3/4 cup orange juice and next 5 ingredients, stirring well.

3Pour over roast.

4Cover and marinate in refrigerator for 8 hours, turning occasionally.

5Place roast and marinade in a large Dutch oven.

6Cover and bake at 350° for 2 1/2 hours or until meat is tender.
