- 1 can (13 1/2 oz.) pineapple chunks
- 4 Tbsp. brown sugar
- 1/2 tsp. salt
- 2 (1 lb.) cans sliced beets, drained
- 1/2 c. water
- 1/3 c. cider vinegar
- 1 Tbsp. cornstarch
- 1/8 tsp. ginger, ground
Directions

1Drain syrup from pineapple and mix with water and vinegar. Combine the brown sugar, cornstarch, salt and ginger.

2Blend the two mixtures.

3Cook until thick, stirring constantly.

4Add beets and heat.

5Add pineapple chunks.

6Serve hot or cold.
