Ingredients
- 2 c. long grain white rice
- 1 Tbsp. olive oil
- 4 c. stock
- 1/2 c. apple juice
- 1 large onion, diced
- 2 cloves garlic, diced
- 2 tsp. lemon juice
- 1/2 tsp. dried thyme
Directions

1In 2-quart pan, combine the rice and oil.

2Stir over medium heat until rice is golden brown (5 minutes).

3Add stock, apple juice, onion, garlic, lemon juice and thyme.

4Reduce heat to low; cover pan and simmer until all liquid has been absorbed and rice is tender, about 20 minutes.

5Fluff with fork before serving. Serves 6.
