- 4 lbs boneless lamb shoulder
- 12 cup flour
- salt and pepper
- 3 tablespoons olive oil
- 1 cup bouillon
- 1 cup chopped celery
- 2 medium onions, chopped
- 1 green pepper, chopped
- 1 orange, peeled and sliced
- 1 apple, peeled,cored and quartered
- 12 cup apricot brandy
Directions

1Cut meat into 2-inch cubes.

2Mix flour with salt and pepper and coat cubes.

3Heat oil in Dutch oven and brown meat on all sides.

4Add bouillon and bring to boil.

5Reduce heat and add all other ingredients, except brandy.

6Simmer covered for 1& 3/4 hours, stirring occasionally.

7One half hour before stew is done, add brandy.

8If too juicy, increase heat slightly.
