  • 34 teaspoon salt
  • 34 teaspoon sugar
  • 13 teaspoon baking powder
  • 34 cup boiling water
  • 2 teaspoons sesame oil
  • 8 scallions, thinly sliced
  • 4 teaspoons peanut oil

Directions

    In a medium bowl, combine the flour, salt, sugar and baking powder.

    With a fork, stir in the boiling water until the dough forms a ball.

    Transfer to a floured surface and knead for 5 minutes or until smooth.

    Cover with plastic wrap and let rest for 1 hour.

    Transfer the dough to a floured surface and knead again until smooth.

    Roll out to a 11 by 8 inch rectangle.

    Brush the dough with the sesame oil, sprinkle with the scallions and press them into the dough.

    Roll up the dough jelly roll style and then slice into 4 pieces.

    Cover and let rest for 10 minutes.

    Preheat oven to 250.

    Roll out each piece of dough to a 5 inch round.

    In a small nonstick skillet, cook 1 pancake in 1 teaspoon of the peanut oil.

    Transfer to a baking sheet.
