Scallop Casserole

- 1/2 lb. fresh mushrooms
- 3 Tbsp. butter or margarine
- 2 Tbsp. flour
- 1 c. light cream
- 4 or 5 Tbsp. dry vermouth
- 1 lb. bay scallops
- salt and pepper to taste
- 1 c. buttered dry bread crumbs
Directions

1Clean and thinly slice mushrooms.

2Saute in butter until lightly browned.

3Stir in butter and cream and bring to boil, stirring constantly.

4Add vermouth and scallops.

5Taste and add salt and pepper as needed.

6Spoon into buttered casserole dish. Sprinkle with bread crumbs.

7Cover and bake at 350° for 30 minutes.

8Serve over rice or noodles.

9Makes about 6 servings.
