- 1/4 c. sliced leek
- 1/2 c. diced red pepper
- 1 clove garlic, minced
- 2 c. cooked rice
- 1 lb. sea scallops, cut into quarters
- 2 Tbsp. lemon juice
- 1 to 2 Tbsp. olive oil
- 1 to 2 Tbsp. red wine vinegar
- 1 to 2 Tbsp. horseradish
- 2 to 6 drops hot sauce
Directions

1Saute vegetables in olive oil.

2Add sea scallops and cook until opaque (10 to 15 minutes).

3Add lemon juice, vinegar, horseradish and hot sauce.

4Mix with cooked rice.
