Scallop-Rice Salad

  • 1/4 c. sliced leek
  • 1/2 c. diced red pepper
  • 1 clove garlic, minced
  • 2 c. cooked rice
  • 1 lb. sea scallops, cut into quarters
  • 2 Tbsp. lemon juice
  • 1 to 2 Tbsp. olive oil
  • 1 to 2 Tbsp. red wine vinegar
  • 1 to 2 Tbsp. horseradish
  • 2 to 6 drops hot sauce

Directions

    Saute vegetables in olive oil.

    Add sea scallops and cook until opaque (10 to 15 minutes).

    Add lemon juice, vinegar, horseradish and hot sauce.
