Ingredients
- 1 c. butter
- 1 lb. fresh mushrooms, sliced
- 2 medium green peppers, chopped
- 5 to 8 green onions, chopped
- 1 clove garlic, minced
- 2 lb. scallops, well drained
- salt and pepper
- 1/4 c. white wine or vermouth
- hot cooked rice
Directions

1Melt butter in large skillet.

2Saute mushrooms, green peppers, onions and garlic over medium-high heat until soft.

3Remove with slotted spoon.

4Add scallops to skillet and saute over high heat. As scallops begin to shrink, return vegetables to skillet; salt and pepper to taste.

5Stir in wine.

6Serve immediately over hot rice. Serve with your best white wine.
