Scallop Saute

Ingredients

  • 1 c. butter
  • 1 lb. fresh mushrooms, sliced
  • 2 medium green peppers, chopped
  • 5 to 8 green onions, chopped
  • 1 clove garlic, minced
  • 2 lb. scallops, well drained
  • salt and pepper
  • 1/4 c. white wine or vermouth
  • hot cooked rice

Directions

    Melt butter in large skillet.

    Saute mushrooms, green peppers, onions and garlic over medium-high heat until soft.

    Remove with slotted spoon.

    Add scallops to skillet and saute over high heat. As scallops begin to shrink, return vegetables to skillet; salt and pepper to taste.

    Stir in wine.

    Serve immediately over hot rice. Serve with your best white wine.
