- 2 eggs, beaten
- 1 c. crushed butter flavored crackers (about 20 crackers)
- 1 c. diced fresh or jarred mango or 1 c. diced fresh or frozen peaches, slightly sweetened
- 1/2 c. diced onion
- 1 tsp. sugar
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1 Tbsp. minced fresh parsley
Directions

1In a bowl, combine first 8 ingredients.

2Transfer to a greased shallow 2-quart baking dish.

4Bake, uncovered, at 350° for 40 to 45 minutes or until golden brown. Makes 6 servings.
