  • 2 (14 3/4 oz.) cans cream-style corn
  • 2 eggs, beaten
  • 1 c. crushed butter flavored crackers (about 20 crackers)
  • 1 c. diced fresh or jarred mango or 1 c. diced fresh or frozen peaches, slightly sweetened
  • 1/2 c. diced onion
  • 1 tsp. sugar
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1 Tbsp. minced fresh parsley

    Transfer to a greased shallow 2-quart baking dish.
