- 1 beaten egg
- 1 c. milk
- 1 c. coarsely crushed saltines or multi-grain
- 1 (17 oz.) can cream-style corn
- 1/4 c. finely chopped onion
- 3 Tbsp. butter or margarine, melted
- 1 can Cheddar cheese soup
- pimiento
Directions

1Preheat oven to 350°.

2Combine egg, milk, soup, 2/3 cup cracker crumbs, 1/4 teaspoon salt and dash of pepper.

3Stir in corn, onion and pimiento; mix well.

4Turn into a 1-quart casserole.

5Toss butter with remaining crumbs; sprinkle atop corn mixture.

6Bake, uncovered, at 350° for 1 hour or until a knife inserted near center comes out clean.
