- 16 oz. can whole kernel corn, drained
- 1/4 c. chopped onion
- 1/2 small chopped green pepper
- 2 Tbsp. butter
- 2 Tbsp. flour
- 1 tsp. salt
- 1/2 tsp. paprika
- 2 Tbsp. dry mustard

- 3/4 c. milk
- 1 egg, beaten
- 1/3 c. cracker crumbs
- 1 Tbsp. butter, melted
Directions

1Saute onions and peppers in 2 tablespoons butter until tender. Remove from heat.

2Stir in flour and seasonings.

3Cook over low heat, stirring constantly, until bubbly.

4Remove from heat; gradually stir in milk.

5Heat to boiling, stirring constantly. Boil and stir 1 minute.

6Stir in corn and egg.

7Pour into an ungreased 1-quart casserole dish.

8Stir cracker crumbs and 1 tablespoon melted butter together; sprinkle over corn.

9Bake, uncovered, in 350° oven for 30 to 35 minutes.
