  • 1 stick margarine
  • 1 can whole kernel corn
  • 1 box Jiffy corn muffin mix
  • 1 c. sour cream
  • 1/2 c. onion, chopped
  • 1/4 c. green pepper, chopped
  • 1 can creamed corn
  • 3 eggs, beaten
  • 1 c. shredded Cheddar cheese

Directions

    Saute margarine, onion and green pepper.

    Put in greased casserole dish.
  3. 3
    Add 2 cans of corn, corn muffin mix and eggs. Mix all together in casserole.

    On top, spread sour cream and on top of that Cheddar cheese.

    Bake for 45 minutes at 350°.
