  • 1 beaten egg
  • 1 c. milk
  • 1 c. crushed saltine crackers (22 crackers)
  • 1/4 tsp. salt
  • dash of pepper
  • 1 (17 oz.) can creamed corn
  • 1/4 c. finely chopped pimiento
  • 1 Tbsp. butter or margarine, melted
  • 2 Tbsp. dry, chopped onion

Directions

    Combine egg, milk, 2/3 cup crackers, salt and pepper.

    Stir in corn, onion and pimiento; mix well.

    Turn into a 1-quart casserole dish.

    Toss butter with remaining crackers; sprinkle on top of corn mixture.

    Bake, uncovered, in a 350° oven for 1 hour, or until a knife inserted near center comes out clean.
