  • 1 egg, beaten
  • 1 c. milk
  • 1 c. coarsely crushed saltine crackers
  • 1 (17 oz.) can creamed corn
  • 1/4 c. chopped onion
  • 3 Tbsp. chopped pimento
  • 1 Tbsp. butter
  • salt and pepper

Directions

    Combine egg, milk, 2/3 cup cracker crumbs, 1/4 teaspoon salt and dash of pepper.

    Stir in corn, onion and pimento; mix well. Turn into a 1 quart casserole.

    Toss butter with remaining crumbs; sprinkle on top of corn mixture.

    Bake uncovered in 350° oven 1 hour or until knife inserted comes out clean.
