- 1 egg, beaten
- 1 c. milk
- 1 c. coarsely crushed saltine crackers
- 1 (17 oz.) can creamed corn
- 1/4 c. chopped onion
- 3 Tbsp. chopped pimento
- 1 Tbsp. butter
- salt and pepper
Directions

1Combine egg, milk, 2/3 cup cracker crumbs, 1/4 teaspoon salt and dash of pepper.

2Stir in corn, onion and pimento; mix well. Turn into a 1 quart casserole.

3Toss butter with remaining crumbs; sprinkle on top of corn mixture.

4Bake uncovered in 350° oven 1 hour or until knife inserted comes out clean.
