Scalloped Corn And Shrimp

- 2 1/2 c. corn
- 3 Tbsp. minced onion
- green pepper to taste
- 1 c. coarsely crumbled bland crackers
- 5 Tbsp. unsalted butter
- 1/2 lb. shrimp, shelled and deveined
- 1 c. milk
Directions

1In a bowl, combine the corn, onion and salt and pepper.

2In a buttered shallow baking dish, sprinkle about 1/4 cup of the cracker crumbs in an even layer; dot them with butter and add half the corn mixture.

3Add another 1/4 cup of the crumbs and the remaining corn mixture.

4In a saucepan, melt the remaining 3 tablespoons butter; mix in remaining crumbs and sprinkle on top of corn.

5Bake in preheated 400° oven for 20 minutes.

6Serves 4.
