Scalloped Eggplant

- 2 Tbsp. chopped green pepper
- 2 Tbsp. chopped onion
- 1/4 c. melted butter
- 1 medium eggplant, peeled and cubed
- 2 c. chopped canned or cooked tomatoes
- 1 tsp. salt
- pepper to taste
- 3/4 c. bread cubes
Directions

1Saute pepper, onion and butter.

2Add eggplant, tomatoes, salt and simmer, covered, for 10 minutes.

3Spoon into a lightly greased 2-quart casserole.

4Combine remaining butter with bread cubes and spoon over eggplant.

5Bake at 350° for 20 minutes or until tender. Serves about 4.
