Scalloped Eggplant

  • 2 Tbsp. chopped green pepper
  • 2 Tbsp. chopped onion
  • 1/4 c. melted butter
  • 1 medium eggplant, peeled and cubed
  • 2 c. chopped canned or cooked tomatoes
  • 1 tsp. salt
  • pepper to taste
  • 3/4 c. bread cubes

Directions

    Saute pepper, onion and butter.

    Add eggplant, tomatoes, salt and simmer, covered, for 10 minutes.

    Spoon into a lightly greased 2-quart casserole.

    Combine remaining butter with bread cubes and spoon over eggplant.

    Bake at 350° for 20 minutes or until tender. Serves about 4.
