- 1 large peeled eggplant, cut into 1-inch pieces
- 5 Tbsp. butter
- 4 Tbsp. chopped green pepper
- 3 Tbsp. finely chopped onion
- 3 c. cooked tomatoes
- 1 1/2 tsp. salt
- 1/8 tsp. pepper
- 1 c. buttered bread crumbs
Directions

1In a frying pan, cook green pepper and onion in butter

2until tender. Add tomatoes, salt, pepper and eggplant. Cook slowly for 10 minutes. Pour mixture into a greased casserole. Spread bread crumbs evenly on top of casserole. Bake at 350° for 25 minutes until eggplant is tender. Serves 6.
