  • 1/4 c. butter (1/2 stick)
  • 1/4 c. flour
  • 1 teaspoon salt
  • 1 teaspoon seasoned salt
  • 1/4 teaspoon pepper
  • 2 c. lowfat milk
  • 1 (10 ounce.) pkg. frzn peas, partially defrosted and broken apart
  • 1 pound sm. white onions
  • 1 pound potatoes, peeled and sliced
  • 1 c. shredded Swiss cheese

Directions

    Heat butter in saucepan over low heat; blend in flour, salts, and pepper.

    Add in lowfat milk, stirring constantly.

    Cook and stir till sauce is smooth and thickened.

    Arrange 1/2 of the peas, onions, and potatoes in a buttered 1 1/2 qt shallow casserole.

    Spoon 1/2 the sauce over vegetables, sprinkle 1/2 the cheese over sauce.

    Repeat.

    Bake at 375 degrees till vegetable are tender, about 1 hour.
