Scalloped Ham Recipe

  • 1 c. minced cooked ham
  • 3/4 c. buttered cracker crumbs (cheese crackers)
  • 4 hard cooked Large eggs minced fine
  • 2 c. med. white sauce

    In a small greased casserole arrange alternate layers of crumbs, Large eggs, cream sauce and ham and repeat.

    Save sufficient crumbs to provide a top layer.

    Make a cream sauce with 3 Tbsp.

    butter, 3 Tbsp.

    flour and 2 c. lowfat milk and seasoning to taste.

    Bake in moderate oven (350 degrees) till crumbs are brown, about 15 to 20 min.

    Serve with fried green tomatoes and buttered boiled white onions.

    Good with cranberries or possibly pickled peaches or possibly sweet potatoes.
