Scalloped Meatballs

Ingredients

  • 2 c. sliced potatoes
  • 1 c. sliced carrots
  • 1 medium-size onion, sliced
  • 2 tsp. salt
  • 1 lb. ground beef
  • 1 egg
  • 1/4 c. bread crumbs
  • 1/3 c. milk
  • 1/4 tsp. thyme (optional)
  • 2 Tbsp. margarine
  • 1 can cream of mushroom soup
  • 8 oz. sour cream

Directions

    Parboil potatoes, carrots, onion and 1 teaspoon salt for 10 minutes.

    Drain and set aside.

    Mix ground beef, egg, bread crumbs, milk, thyme and 1 teaspoon salt.

    Shape into balls.

    Brown meatballs in margarine.

    Remove meatballs from frying pan and pour off all drippings.

    In same frying pan stir soup and sour cream; heat just until hot.

    Layer half of vegetables, meatballs and soup mixture in a baking dish.

    Repeat the layers and bake at 375° for 30 minutes.
