Scalloped Oysters

- 1 1/2 c. cracker crumbs
- 1 tsp. salt
- 1/4 tsp. black pepper
- 1/3 c. butter, melted
- 1 pt. shucked oysters, liquid reserved (about 1/2 c.)
- 1/2 c. light cream
- dash of ground mace or nutmeg
- Roquefort cheese
Directions

1Preheat the oven to 350°.

2Combine crumbs, salt, pepper and melted butter; mix well.

3Layer about 1/3 of the crumbs in a greased 1-quart baking dish.

4Cover with half the oysters and oyster liquor.

5Add half the cream.

6Add another third of crumbs and follow with a layer of remaining oysters, liquid and cream. Top with remaining crumbs and sprinkle with mace.

7Dot generously with Roquefort cheese.

8Bake in hot oven until oysters are cooked and top is crisp and browned, about 30 minutes.
