- 3 lb. potatoes (8 c.)
- 4 medium onions, sliced thin
- 3 tsp. salt
- 3 Tbsp. butter or margarine
- 2 Tbsp. flour
- 1/8 tsp. pepper
- 1/8 tsp. paprika
- 2 1/4 c. milk
- 2 Tbsp. chopped parsley
Directions

1Preheat oven to 400°.

2Grease 2-quart casserole.

3Wash, peel and thinly slice potatoes.

4Cook the potatoes and onions, covered in boiling water and 2 teaspoons salt, until only slightly tender and drain.

5Melt butter in saucepan.

6Remove from heat and stir in flour, pepper, paprika and remaining 1 teaspoon salt.

7Cook at medium heat, until thickened and smooth.

8In a greased casserole, layer 1/3 of the potatoes and onions.

9Sprinkle with 1/3 of the parsley and sauce.

10Prepare each of the other 2 layers in the same way and bake uncovered for 35 minutes, until browned and potatoes are tender when pierced.
