Ingredients
- 2 (1 1/2 lb.) chicken parts
- 1 c. water
- 1 (15 oz.) can tomato sauce
- 1 Tbsp. oregano
- 1/2 c. dry white wine
- 1 medium onion, chopped
- 1 large green pepper, sliced thin
- 1 clove garlic, minced
- 1/2 tsp. salt
- 1/4 tsp. pepper
Directions

1Bring chicken to boil in water.

2Simmer for 30 minutes. Remove and cool.

3Pour stock into measuring cup to make 2 cups and refrigerate.

4Skim any fat from top of stock when cooled.

5Debone chicken.

6Cut chicken into chunks.

7Place all ingredients in pot and cover, bring to boil, turning heat down immediately.

8Simmer, uncovered, 30 minutes or until sauce has thickened.

9Serve over rice.
