Ingredients

  • 2 (1 1/2 lb.) chicken parts
  • 1 c. water
  • 1 (15 oz.) can tomato sauce
  • 1 Tbsp. oregano
  • 1/2 c. dry white wine
  • 1 medium onion, chopped
  • 1 large green pepper, sliced thin
  • 1 clove garlic, minced
  • 1/2 tsp. salt
  • 1/4 tsp. pepper

Directions

    Bring chicken to boil in water.

    Simmer for 30 minutes. Remove and cool.

    Pour stock into measuring cup to make 2 cups and refrigerate.

    Skim any fat from top of stock when cooled.

    Debone chicken.

    Cut chicken into chunks.

    Place all ingredients in pot and cover, bring to boil, turning heat down immediately.

    Simmer, uncovered, 30 minutes or until sauce has thickened.

    Serve over rice.
