  • 3 Tbsp. butter
  • 3 Tbsp. flour
  • 1 1/4 c. milk
  • 3/4 c. shredded Cheddar cheese
  • 1 c. finely chopped onion
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 tsp. minced garlic (3 to 4 cloves)
  • 3 medium Russet potatoes, sliced very thin

    Melt butter.

    Stir in flour.

    Cook and stir for 1 minute over medium heat.

    Gradually add milk.

    Cook and stir until thick and smooth.

    Stir in cheese until melted.

    Stir in onion, garlic, salt and pepper.

    Cook 1 to 2 minutes.

    Grease rectangular Pyrex/glass casserole pan.

    Layer half of the sliced potatoes in the pan. Pour half of the sauce over the potatoes.

    Layer remaining potatoes over sauce.

    Pour remaining sauce over potatoes.

    Cook for 50 to 70 minutes in 400° oven.
