  • 6 good sized potatoes
  • 1 pt. sour cream
  • 1 bunch green onions or chives
  • 1 1/2 c. shredded sharp Cheddar cheese
  • 1/2 tsp. salt
  • 1/4 tsp. each pepper and paprika
  • 5 c. diced, cooked potatoes
  • 2 tsp. salt
  • 2 c. creamed cottage cheese
  • 1 c. dairy sour cream
  • 1/4 c. chopped green onion
  • 1 clove garlic
  • 1/2 c. shredded American cheese (optional)
  • paprika

Directions

    Cook unpeeled potatoes and cut into cubes.

    Sprinkle with salt.

    Combine cottage cheese, sour cream, onion, garlic and 1 teaspoon salt.

    Fold into potato cubes.

    Put into casserole.

    Top with cheese and paprika.

    Bake at 350° for 40 to 45 minutes or until heated through.
