- 1/2 c. finely chopped onion
- 1 Tbsp. butter
- 2 Tbsp. flour
- 1 1/2 tsp. salt
- 1 1/2 c. milk or evaporated milk
- 1/2 c. shredded sharp Cheddar cheese
- paprika or parsley flakes
Directions

1Arrange potatoes in a buttered glass casserole.

2Sprinkle with flour, salt and onion.

3Mix lightly.

4Stir in milk and dot with butter.

5Cook, covered, 15 to 18 minutes, stirring every 4 minutes.

6Rest, covered, for 5 minutes.
