Scalloped Spinach

  • 1 (10 oz.) pkg. frozen, chopped spinach, cooked and drained
  • 2 Tbsp. chopped onions
  • 2 beaten eggs
  • 1/2 c. milk
  • 1/2 c. sharp cheese
  • 1/2 c. buttered cracker crumbs
  • 1/4 tsp. salt
  • dash of pepper

Directions

    Combine all ingredients except cracker crumbs.

    Put in a greased 9 x 13-inch casserole.

    Bake at 350° for 30 minutes or until knife inserted into center comes out clean.

    Serves 4 but easily doubled.

    Just increase cooking time a little.
