- 2 lb. zucchini
- 1/4 c. onion
- 1/2 c. fine crushed crackers
- 2 beaten eggs
- 1/8 tsp. dried thyme, crushed
- 1/4 lb. sausage
- 1/2 c. Parmesan cheese
- 1 tsp. salt
Directions

1Cook zucchini covered in salt water until tender.

2Drain chopped zucchini.

3Cook sausage and onion until brown.

4Drain off fat.

5Reserve 2 tablespoons cheese.

6Add remaining cheese, squash and liquid, crackers, eggs, salt and thyme to sausage.

7Mix well. Turn in 1 1/2-quart casserole dish.

8Sprinkle with reserved cheese.

9Bake uncovered at 350° until set, about 40 to 45 minutes.
