Scalloped Zucchini

  • 2 lb. zucchini
  • 1/4 c. onion
  • 1/2 c. fine crushed crackers
  • 2 beaten eggs
  • 1/8 tsp. dried thyme, crushed
  • 1/4 lb. sausage
  • 1/2 c. Parmesan cheese
  • 1 tsp. salt

Directions

    Cook zucchini covered in salt water until tender.

    Drain chopped zucchini.

    Cook sausage and onion until brown.
  4. 4
    Drain off fat.

    Reserve 2 tablespoons cheese.

    Add remaining cheese, squash and liquid, crackers, eggs, salt and thyme to sausage.

    Mix well. Turn in 1 1/2-quart casserole dish.

    Sprinkle with reserved cheese.

    Bake uncovered at 350° until set, about 40 to 45 minutes.
